Salted Caramel Choc Bites


A match made in heaven; chocolate and salted caramel….just thinking about it makes my mouth water with anticipation. Even better, there is a healthy way to have it so you can eat these delicious pieces of heaven guilt free!!

Salted Caramel Choc Bites

A few years ago I came across a little book called I Quit Sugar by Sarah Wilson and it has changed my life.  I did the 8 week sugar detox and it was so hard at the time, you really discover how much you rely on sugar on a daily basis.  I also discovered how much sugar is in so many processed food products that you would never suspect had sugar.  These books have shaped my food journey not only to quit sugar (refined, processed sugar) but to eliminate processed foods.

You may be thinking to yourself I could never give up sugar…I love chocolate and cake and sweets and biscuits and all the delicious things that make life worth living.  Well, you don’t have to!! There is no need to deprive yourself…you can still enjoy all of these things..but even better than the processed chemical filled things that you can buy at the shops.  After detoxing my body from processed sugar,don’t get me wrong, I do still occasionally indulge in a naughty treat every so often, but I usually always find it too sickly sweet and not as enjoyable as I imagined…or as it used to be.  I much prefer what I can make myself!

Salted Caramel Choc Bites

Making things from scratch can be so fulfilling, you know what you are going to be putting into your body and you can choose what you are going to use to fuel your body so it can function to its greatest potential. Natural unprocessed chocolate can be found in cacao, it has so many health benefits and gives your home made creations a rich chocolate flavour, that goes perfectly with salted caramel…salty, sweet rich chocolate pieces of joy 🙂

Salted Caramel filling

8 medjool dates

1/2 cup coconut oil

2 tablespoon almond butter (or any nut butter you prefer)

1/3 cup almond milk

pinch of salt


1/2 cup coconut oil

1/2 cup cacao

2 tablespoon maple syrup (or sweetener of your choice)


To make the chocolate, melt the coconut oil, then add the cacao and maple syrup and stir to combine. Spoon the chocolate mixture into the moulds until they are roughly half full, then place in the freezer to set.

While the chocolate is setting in the moulds you can start preparing the salted caramel. Place all of the ingredients into a blender and whizz until the mixture is nice and smooth. Once the chocolate in the moulds has become firm you can spoon the salted caramel mixture on top (approximately half a teaspoon but will depend on the size or your moulds).

Now simply spoon the remaining chocolate mixture on top until level with the top of the mould. Place back into the freezer to set. Once set pop the salted caramel choc bites out of the mould and enjoy!


Warning these are seriously addictive!!…try not to eat them all at once 🙂
